Who is Mark Hix and what does he do?
I am! And, I own Hix restaurants, including the Tramshed and Hixter – my latest ventures, along with the academy.
And you started out as a chef?
I started off at the Hilton, heating up peas! But after a lot of hard work I became chef director at Caprice holdings, overseeing high profile restaurants like ‘The Ivy’ and ‘Le Caprice’ in London, before leaving to start my own business.
Why have you started an academy in Weymouth?
There’s a lot of talent here.
How do you know?
Because I went to college here…
Really. I grew up in Bridport, and came to Weymouth College to do a city and guilds. It was a pretty long time ago, but I remember I had a fantastic college lecturer who inspired me a lot. I’m hoping this restaurant will do the same for others starting out in the industry.
